“City to FC+: Versatile, incredibly sweet, dark grape, apricot jelly, cane juice, orange spice tea, peach Snapple, complex cup! Good for espresso.” -Sweet Marias

The initial sip is sweet with a nice spice note on the finish. There is little to no acidity, but there is a nice complexity to the body. There are some apricot notes that add some fruit sweetness. The finish lingers with a light spice and perhaps even a little peach note.

As it cools, the sweetness is lightly fruit flavored. The apricot notes have integrated into the cup, but they are still detectable. There is another fruit note in the background that I can’t nail down, but I am guessing it could be the grape, but it doesn’t have a dark fruit note. It has a light, sweet note to me, with just a little tannin-like dryness. There is a light tartness that comes through in the finish, but it doesn’t linger. I think the spice notes are the main source of the tartness, but they bring a nice balance against the sweetness.

This is definitely a complex cup. The overall sweetness of the cup is strong, however the spice notes provide a nice balance, bringing out some tartness as well as a lingering spice note. The apricot adds a nice note, and the cane juice create a nice overall sweetness. As for the roasting details, the roast was done in the Gene Cafe roaster, with a heat setting of 460 degrees, for 15 minutes. First crack started approximately around 13:00 minutes and continued for 2.0 minutes. Cooling was done in the Gene, down to 215 degrees, and then removed and cooled in a colander until room temperature. I will be doing a second batch of these beans in order to test it as an espresso.
