“City to Full City+: Subtle top-note complexity, cinnamon stick, apple, pear, malic-like acidity tying it together. Dense sweetness light to dark. Great for espresso.” -Sweet Marias

The first sip is sweet, with pear and cinnamon notes, but as it coats the tongue, there is a light acidity that lingers briefly. There is complexity to the cup, and it is well balanced. The finish is clean, with a light sweetness.  As it cools, there is a little more acidity in the cup, with the apple note more noticeable now as well. The mouthfeel is clean, and the body is light.

Overall this is a nice light cup of coffee. It is not overly sweet or tart, but has a nice complexity that doesn’t overwhelm the lighter notes. I roasted this to a City+ level, but I can see it gaining more body at Full City.
