The first few sips were still a little too hot, but there was a definite brown sugar sweetness, and a honey like viscosity that lingered quite a bit. The body feels juicy, and the malic fruits reminded me of red apples. The acidity was light, when compared to the brown sugar and chocolate tones.
Still at a medium temperature, the sweetness has increased, but the body definitely feels thicker, and still has a juiciness to it. The sweetness is smooth, and it does have a chocolate undertone, and it lingers quite a bit after each sip. As the cup cooled down, the acidity is stronger, but the flavors are still well balanced with the sweetness, which did have hints of apple, maybe some rhubarb. The finish definitely has more acidity than chocolate, but both still linger quite a bit.
Overall, this is a good first cup of coffee in the morning, especially with the sugar and chocolate tones, but the acidity definitely helps brighten the cup as well. As for the roasting details, the roast was done in the Gene Cafe roaster, with a heat setting of 460 degrees, for 15.0 minutes. First crack started approximately around 13:30 minutes and continued for about 1.5 minutes. Cooling was done in the Gene, down to 215 degrees, and then removed and cooled in a colander until room temperature.
